After a successful hunt, inspect the birds for meat quality, looking for a deep, rich color and minimal signs of stress or injury. When handling the birds, take care to minimize bruising and bleeding, which can affect the meat’s quality. Field dress the birds immediately, using a sharp knife to make clean cuts, and then store them in a cooler with ice to maintain their quality until you can process them further.
